Practicing hospitality is something I thoroughly enjoy! I love planning out all the little details. Even though having people over for dinner has taken on a whole new meaning as a Mom of two young children (3 years and 5 months), it simply allows me to get even more creative in my menu and household preparation.

This has become one of my go-to recipes – delicious and so easy! It takes roughly 15 minutes to prepare first thing in the morning and it can be served hot during the dinner hours very flexibly. Once the meat is in the slow cooker, I focus on cleaning my kitchen and the rest of house along with my daily routine.

Without further ado,

Slow Cooker French Dip Beef

  • 2-3 Tbsp. olive oil
  • 1 3-4 lb. chuck roast
  • 1 medium sweet onion, sliced
  • Steak Seasoning
  • 1.5 Tbsp Beef Base
  • 1 quart (4 cups) of water

Heat oil a large skillet on medium heat. While that is heating up, rub a generous amount of steak seasoning into all sides of the roast. Once oil is hot, sear the roast on all sides allowing the meat to caramelize – approximately 5 minutes on each side. Turn slow cooker on low and place seared roast in the bottom. To the pan with the meat drippings, add the sliced onion and saute until translucent. Next add the beef base to pan and a splash of the water. Pour onion, beef base, water mix over the roast in the crock. Add the rest of the water. Cover and cook on low 8-10 hours or until meat is tender and shreds easily with a fork.

Remove shredded beef and onions with a slotted spoon. Ladle the cooking liquid through a fine mesh sieve into a serving bowl. Serve with freshly baked bread such as Asiago Bread from your local Panera Bread or Garlic Parmesan from The Pasty Depot in Coeur d’Alene, Idaho. I like to serve a green salad and fruit along with this or sometimes homemade oven fries.
