I came up with this recipe after trying something similar at our local health food store’s deli. It is delicious!
Thai Chicken Salad
serves 4
Ingredients:
2 cups green cabbage, shredded
1 cup purple cabbage, shredded
1/4 cup cilantro, chopped
1/3 cup carrots, shredded
2 green onions, sliced
1/3 cup peanuts, chopped
1 cup cooked chicken, sliced
Dressing:
2 Tbsp olive oil
1 Tbsp rice vinegar
1 Tbsp sweet chili sauce
1/2 Tbsp agave nectar
1/4 tsp black pepper
1/4 tsp salt
juice of 1/2 lime
pinch of cayenne pepper
Mix dressing ingredients and set aside. I like to put them all into a small glass jar and shake. Set aside.
Prepare salad ingredients. Toss together with the dressing and serve. Can easily be made ahead, but best served the same day.
