I came up with this recipe several years ago and have loved it ever since. This is great by itself, placed on bread as a sandwich, on crackers, or as open faced tea sandwiches as pictured here. Just about every person I have served this to as requested the recipe so I decided it was time to finally write it down as I usually just eyeball the ingredients and whip it up in a hurry. This can be made ahead which I love to do when entertaining as less time is spent in the kitchen when I want to be focused on my company. Without further ado…

 

The Ultimate Chicken Salad

  • 2 cups cooked chicken, diced (I usually use either Costco’s rotisserie chicken or canned chicken)
  • 1 stalk of celery, diced
  • 1 green onion, chopped
  • 1/4 cup craisins
  • 1/2 an apple, diced (I use whatever I have on hand usually either granny smith or fuji)
  • 1 Tbsp. fresh parsley, minced
  • 3/4 cup mayonnaise
  • 1/2 tsp. yellow curry powder
  • pinch of cayenne pepper
  • salt & pepper to taste (approx. 1/4 tsp. each)

Combine all ingredients. Best if refrigerated 2 hours before serving for the flavors to marry, but can be enjoyed immediately.
